INGREDIENTS
(Serves Four)
- 4 cups of Brave Broth (Brave, Golden, or Harvest depending on personal preference)
- 12 ounces dried soba or udon noodles
- 1 cup frozen edamame beans, thawed
- 4 green onions, thinly sliced
- 2 handfuls, about 2 cups, of freshly chopped herbs such as parsley, cilantro, or chives
- 1 lime cut into wedges, if desired
COOKING INSTRUCTIONS
- Boil the noodles according to the package instructions, it just takes a few minutes. Divide the noodles between four bowls.
- While the noodles are cooking, heat the bone broth in a small saucepan, or in the microwave. Heat until it comes to a simmer.
- Divide the beans, onions, and herbs among the noodle bowls, and pour the broth into each. Serve right away. Garnish with fresh lime and enjoy!
Additional toppings: shredded rotisserie chicken, soft boiled egg, cooked shrimp, cubes of firm tofu, thinly sliced mushrooms, snap peas, or siracha if you like some spice!
