8 oz cremini mushrooms, sliced 1/4 inch thick
3 leeks, halved lengthwise and thinly sliced
3 carrots, sliced 1/4 inch thick
Kosher salt and freshly ground pepper
2 teaspoon chopped fresh thyme
4 cups Golden Brave Broth
Zest of 1 lemon, plus 2 tsp. lemon juice
3 bay leaves
12 oz. cooked turkey cut into cubes
1 cup wild rice blend
6 cups baby spinach
