2 cups quinoa
1 cup Golden Brave Broth
1/4 cup dried cranberries
1/4 cup sliced (or slivered) almonds
1 bunch of kale, trimmed from the stalk, ripped into bite-sized pieces, and massaged with vinaigrette, below
Juice of 1 lemon
1/4 cup of good olive oil
Cook the quinoa according to instructions – with Brave Golden Broth of course – and while it’s cooking, get to cutting and yes, massaging that kale. Wash your hands, add the dressing to the kale, and then use your hands to break down the leaves until they’re more wilted looking. Add the other ingredients – including the warm quinoa right off the stovetop, mix, and enjoy!
